Pub salad sales remain low ? CateringEquipment4Hospitality.com

Research undertaken as part of food and drink consultancy firm CGA Strategy?s Trading Index and Food Price Monitor programmes shows that the consumption of salads in pubs remains lower than favourites such as burgers, roasts and even scampi ? despite the ongoing fat tax debate.

Pubs now sell an average of 26 salads per week at an average price of ?7.63.

Burgers outsell salads 4.5 to 1, pies by 1.5 to 1

According to an NHS study, a quarter of all adults in the UK were classed as obese in 2010. Despite this, and an increasing prevalence of calorie counts on menus, burgers still outsell salads at a rate of 4.5 to 1 in the nation?s pubs, and waistline-expanding pies by 1.5 to 1.

Price versus perceived value

CGA Strategy?s Tom Lynch said:

?Although we are seeing more and more quality-seeking diners in pubs, the current price positioning of salads could be having a negative impact on sales, as customers still seek value from their visits.

?With the price of salads so significantly higher than the majority of other main meal items, it does seem like you have to spend pounds to shed pounds in our pubs.?

Regionality does play a part, with a clear north-south divide in consumption ? Southerners eat more salads than Northerners, with sales highest in Anglia and lowest in Tyne Tees.
